Apple Pie Egg Rolls Recipe
Ingredients:
- 2 cups diced apples (Granny Smith or Honeycrisp work best)
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch
- 10-12 egg roll wrappers
- Water (for sealing the wrappers)
- Vegetable oil (for frying)
- Powdered sugar (for dusting, optional)
Instructions:
- Prepare the Apple Filling – In a pan over medium heat, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Stir occasionally and cook until the apples soften, about 5-7 minutes.
- Thicken the Mixture – Mix the cornstarch with 2 tablespoons of water to create a slurry. Add it to the apple mixture and stir until the filling thickens. Remove from heat and let it cool slightly.
- Assemble the Egg Rolls – Place an egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of the apple filling onto the lower half of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Use a little water to seal the edges.
- Fry to Perfection – Heat about 1 inch of vegetable oil in a deep pan over medium-high heat. Fry the egg rolls in batches, turning occasionally, until golden brown and crispy (about 2-3 minutes). Remove and drain on paper towels.
- Serve and Enjoy – Dust with powdered sugar and serve warm. For an extra indulgent touch, dip in caramel sauce or serve with ice cream.
